Position Details

General Statement

Culinary Services (CS), a division of Auxiliary Services, provides meals for over 12,000 customers a day becoming an integral part of campus life and the overall college experience. CS proudly provides Montana State University students with not only a repertoire of various cuisines, cooking styles, and flavors, but a comfortable atmosphere to meet friends, study, and simply relax. The division is comprised of 2 residential dining halls, 9 retail operations, Brick Breeden Fieldhouse and Bobcat Stadium Concessions, Fork in the Road food truck, MSU Catering, Indulge In-House Bakery & Salads, and the Farm to Campus Program.

Duties and Responsibilities

The General Manager partners throughout the year with others in the division to support the University’s mission and strategic plan. The 2 dining halls serve over 10,000 meals per day operating a total of 7 days a week from 7am – Midnight providing breakfast, lunch, dinner, and Late Night Bites. Specialty dinners are served multiple times a month highlighting Farm to Campus, holidays, other special events, and student/parent recipes. Working as part of the management team, the GM is responsible to effectively manage the operation in order to meet and exceed goals while providing a welcoming and comfortable environment for students and other patrons to dine and relax. This GM will manage the new dining hall coming in Fall 2018.

  • Active and responsible management of the department’s financial resources and inventory.
  • Engages with the Executive Chef to actively manage production and human resources to ensure customer needs are being met.
  • Ensures all necessary food stuffs and other supplies necessary to do business are being procured in compliance with MSU and state guidelines.
  • Collaborates with the Executive Chef to ensure quality control of meal production.
  • Ensures food production meets/exceeds all state and local food code standards.
  • Partners with CS management and Housing staff to provide a creative and pleasing dining experience for students and other patrons.
  • Ensures the proper maintenance and upkeep of the facilities and equipment.
  • Develops, implements and assesses short and long term strategies and goals and for the operation.
  • Participates in the development and assessment of the overall goals and strategies for CS.
  • Works where needed in the operation performing day to day activities.
  • And actively contributes to the success of the department while performing other duties as needed in support of the department’s mission.

Required Qualifications – Experience, Education, Knowledge & Skills

Bachelor’s degree in business, the hospitality field, culinary arts, closely related fields, or certification(s) from a recognized culinary institute plus progressively responsible management experience in large volume food production or an equivalent combination of relevant education and experience.

Extensive customer relations experience.

Progressively responsible experience supervising a large and diverse staff.

Demonstrated experience with food, labor, and inventory control.

Proficient experience using computers and various software packages.

Preferred Qualifications – Experience, Education, Knowledge & Skills

Experience promoting farm to table solutions and implementing into production.

Experience implementing or managing a sustainability initiative relative to the food industry.

Experience managing a multiple concept food service facility.

Experience working with a menu management system.

  • Generate team oriented solutions to challenges facing the Food Services division.
  • Be knowledgeable about State and Federal health and food safety guidelines.
  • Represent the department and the University to others in a professional and courteous manner

Physical Demands
  • Normal office and kitchen/cooler/freezer environments.
  • Working for long periods of time at a computer or on the phone.
  • Moving about for long periods of time navigating food service and other campus areas.
  • Lifting odd shaped items while conducting business.
  • Occasionally lifting up to 50 lbs.
  • Exposure to cleaning chemicals on a daily basis.
  • Occasionally work outside and in inclement weather.
